Indulgent chocolate chip pancakes with homemade buttermilk.
Ingredients:
  • 0.75 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 0.5 cup miniature chocolate chips, or more to taste
Instructions:
  • In a bowl, mix milk and vinegar and let sit for 5 minutes to create homemade buttermilk.
  • In a large mixing bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  • In a bowl, mix together a whisked egg, butter, and vanilla extract with "soured" milk until smooth. Add the flour mixture and whisk until just combined. Gently fold in chocolate chips, creating a thick batter. Let the batter rest for 5 minutes before proceeding.
  • Preheat a generous skillet over gentle heat and spray with cooking oil.
  • Ladle ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes. Repeat with the rest of the batter and serve hot.
