Chocolate Christmas shortbread buttons

Indulge in delicious chocolate shortbread cookies for a sweet treat that will warm your heart.
Ingredients:
  • 200g unsalted butter, chilled, chopped
  • 107.50 gm caster sugar
  • 65.00 gm rice flour
  • 375.00 ml plain flour
  • 8.80 gm vanilla extract
  • 20.00 gm Dutch-processed cocoa powder, sifted
  • 180g block dark chocolate, chopped
  • Assorted coloured sprinkles, to decorate
Instructions:
  • Preheat your oven to 170C/150C fan-forced, then generously grease 3 large baking trays and line them with baking paper.
  • Blend butter, sugar, flours, vanilla, and cocoa in a food processor until dough forms, pausing to scrape down sides as needed. If necessary, add 2 teaspoons of cold water to help the dough come together. Transfer dough to a floured surface and gently knead to combine.
  • Shape 2 level teaspoons of dough into balls and gently flatten them on a baking tray. Repeat with the rest of the dough. Bake one tray at a time for 10 minutes or until they are just firm to the touch. Let them cool completely on the trays before enjoying.
  • Place the chocolate in a microwave-safe bowl. Microwave on HIGH, stirring every 30 seconds with a metal spoon, until smooth (1 to 2 minutes). Let it stand for 5 minutes to cool slightly.
  • Drizzle chocolate over buttons, sprinkle with colorful sprinkles, and let rest for 30 minutes until firm. Enjoy!
