Indulgent chocolate crackle cheesecake cups filled with creamy cheesecake, gooey caramel, and topped with a Coles Finest Sea Salt, Caramel & Milk Chocolate Mini Easter Egg. Easily customizable with Nutella or Biscoff, no special equipment needed. Makes 12, but scale up to share with a crowd. Refrigerate for up to 3 days.
Ingredients:
  • 90g (2 1/2 cups) rice bubbles
  • 125g (3/4 cup) pure icing sugar
  • 60g copha, chopped
  • 100g dark chocolate, broken into squares
  • 250g cream cheese, chilled, chopped
  • 4.40 gm vanilla extract
  • 200ml thickened cream
  • 90g (1/4 cup) caramel spread, plus extra, to drizzle
  • 120g pkt Sea Salt, Caramel & Milk Chocolate Mini Easter Eggs, to decorate
Instructions:
  • In a large bowl, mix rice bubbles and 80g (½ cup) icing sugar. Microwave copha in a microwave-safe jug for 3 minutes or until melted and hot. Let it sit for 1 minute to soften the chocolate. Stir well until smooth, then combine with the rice bubble mixture. Stir until fully combined.
  • Line a small baking tray with twelve 55ml mini paper cups. Fill each cup with the rice bubble mixture equally. Press the mixture towards the edges using the back of a spoon to create a well in the center. Chill in the fridge for 2 hours until firm.
  • Use electric beaters to blend cream cheese, vanilla, and the rest of the icing sugar in a bowl until smooth. Incorporate the cream and beat until it thickens. Transfer the mixture to a piping bag with a fluted nozzle. Place the caramel in a piping bag and cut off the tip.
  • Take the cups out of the fridge and carefully press up on the base of each cup to loosen the chocolate crackles. Remove the crackles from the paper cups and place them on a baking tray. Fill the cups with the cream cheese mixture almost to the top. Using a piping bag filled with caramel, insert it into the center of each cup and pipe a bit of caramel. Finish by piping the remaining cream cheese mixture on top to create peaks. Chill in the fridge for 3 hours or overnight to set.
  • When ready to serve, place the crackle cups elegantly on a serving plate or board. Drizzle with an extra caramel sauce and garnish with mini Easter eggs for a festive touch. Enjoy right away.
