Chocolate crackle cups with marshmallows

Have kids help make fun and delicious chocolate rice bubble treats for a birthday party.
Ingredients:
  • 80g (2 1/4 cups) Rice Bubbles
  • 65g (1 cup) shredded coconut
  • 60g (1/3 cup) icing sugar mixture
  • 30g (1/4 cup) cocoa powder, sifted
  • 100g copha
  • 40g pink and white marshmallows
  • 100g white chocolate, chopped
Instructions:
  • Combine Rice Bubbles, coconut, icing sugar, and cocoa in a large bowl and mix well.
  • Melt the copha in a small saucepan over medium heat for about 3 minutes. Stir it into the Rice Bubble mixture until fully combined.
  • Spoon the mixture into 24 mini muffin pans. Gently press the mixture towards the edges to create a well in the center using a teaspoon. Chill in the fridge for 30 minutes until firm.
  • Cut the marshmallows into 1cm pieces using children's scissors.
  • Gently release the chocolate crackle cups from the pans using a round-bladed knife and transfer them to a wire rack over a baking tray. Top each cup with marshmallow pieces evenly.
  • Melt the chocolate in a bowl over simmering water, stirring occasionally, until smooth. Remove from heat.
  • Drizzle the luscious chocolate over the fluffy marshmallows using a fork. Allow the decadent chocolate to set for 5 minutes.
