Chocolate crackle rocky road cookies

Indulge in a delicious trifecta of treats in one delectable bite!
Ingredients:
  • 125g unsalted butter
  • 250g dark brown sugar
  • 35g self-raising flour, sifted
  • 150g plain flour, sifted
  • 2.50 gm bicarbonate of soda, sifted
  • 30g good-quality cocoa (Dutch process is best), sifted
  • 50g roasted salted peanuts
  • 70g dark chocolate, chopped
  • 70g milk chocolate, chopped
  • 50g soft raspberry lollies, cut into quarters
  • 125.00 ml mini marshmallows
  • Cornflour, to coat fork
Instructions:
  • Preheat your oven to 200C/180C fan forced and prepare 2 large baking trays by lining them with baking paper.
  • In an electric stand mixer, whip up a fluffy mixture of butter, sugar, and vanilla. Mix in the egg until well combined. Use a wooden spoon to fold in the sifted flours, bicarbonate of soda, and cocoa. Gently incorporate the peanuts, chopped chocolate, raspberry pieces, and mini marshmallows until evenly distributed in the mixture.
  • Place heaped tablespoons of mixture on lined baking trays, spacing them 5cm apart for proper spreading. Use a fork dipped in cornflour to flatten the cookies slightly. Reapply cornflour as needed to prevent sticking.
  • Bake cookies for 8 minutes in the oven, then let them cool on trays for 5 minutes before transferring them to a cooling rack to cool completely. Serve and enjoy!
