Choc-crackle peanut butter cups

Quick, easy, and irresistible choc-crackle peanut butter cups with only 5 ingredients and a pinch of salt.
Ingredients:
  • 75g white marshmallows
  • 30.30 gm thickened cream
  • 100g (2 cups) Coco Pops
  • 6 x 42g pkts Reese's Peanut Butter Cups, paper cases removed
  • 200g Baking Dark Chocolate Melts
  • Sea salt flakes, to serve
Instructions:
  • In a small saucepan, gently heat the marshmallows and cream on low heat, stirring constantly for 2-3 minutes until smooth and fully combined. Let it cool for 2 minutes before using.
  • Combine the Coco Pops with the marshmallow mixture in a large bowl, stirring until evenly coated.
  • Grease twelve 40ml patty pans with oil spray. Add a Peanut Butter Cup to each pan. Spoon the Coco Pop mixture on top using 2 spoons, then gently press down with damp hands to compact. Refrigerate until set.
  • Transfer the chocolate crackle cups from the pans onto a wire rack.
  • For a quick and easy way to melt dark chocolate, place chocolate melts in a microwave-safe bowl. Microwave on Medium, stirring every 30 seconds, until smooth, which should take 2-3 minutes. If you prefer using the stovetop, simply place the melts in a heatproof bowl over a saucepan of simmering water, making sure the water doesn't touch the base of the bowl, and stir until smooth.
  • Drizzle the melted chocolate over the chocolate crackle cups, then sprinkle with sea salt flakes. Let it sit until the chocolate is firm.
