Decadent chocolate custard cake with layers of rich flavors, perfect for any occasion.
Ingredients:
  • 200g butter, softened
  • 220g caster sugar
  • 8.80 gm vanilla extract
  • 100g dark chocolate, melted, cooled slightly
  • 185g self-raising flour
  • 25g cocoa powder
  • 310ml custard
  • 2.50 gm cornflour
  • Icing sugar, to serve
  • Raspberries, to serve
  • Pauls Vanilla Custard, extra, to serve
Instructions:
  • Preheat your oven to 160°C. Grease a 20cm (base measurement) deep springform cake pan and line the base with baking paper. Use an electric mixer to blend butter, sugar, and vanilla in a large bowl until pale and creamy. Mix in the chocolate. Add the eggs one at a time, beating well after each addition.
  • In a medium bowl, sift together the flour and cocoa powder. Alternate adding the flour mixture and 1/2 cup (125ml) custard to the butter mixture, folding to combine. Transfer one-third of the batter into the prepared pan and use a flat-bladed knife to make indents on the surface.
  • In a bowl, mix 3/4 cup custard with cornflour. Spread half of the custard mixture over the indents. Layer the remaining cake batter and custard mixture, finishing with cake batter on top. Bake for 1 1/4 hours until a skewer comes out clean. Allow to cool slightly in the pan before serving.
  • Gently move the cake to a serving platter. Sprinkle with powdered sugar. Enjoy warm with fresh raspberries and a little more custard on the side.
