Decadent chocolate cake infused with coffee liqueur, rolled with creamy cream cheese filling - a festive holiday treat.
Ingredients:
  • 0.66666668653488 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 5 eggs
  • 2 (1 ounce) squares unsweetened chocolate
  • 2 tablespoons water
  • 2 tablespoons coffee-flavored liqueur
  • 2 tablespoons white sugar
  • 0.25 teaspoon baking soda
  • confectioners' sugar for dusting
  • 4 (1 ounce) squares semisweet baking chocolate
  • 1 (8 ounce) package cream cheese, softened
  • 3 cups confectioners' sugar
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon coffee flavored liqueur
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch jellyroll pan and line it with parchment paper. Combine flour, baking powder, and salt, and set aside.
  • Beat the eggs in a large mixing bowl on high until very pale and fluffy. Gradually add sugar, beating until very thick. Gently fold in the flour mixture until combined.
  • Gently melt chocolate in a saucepan over low heat. In a bowl, mix 2 tbsp water, 2 tbsp coffee liqueur, 2 tbsp sugar, and baking soda. Gradually blend into the melted chocolate until smooth. Swiftly fold chocolate mixture into batter until well combined.
  • Transfer batter to a 10x15 inch pan. Bake at 350 degrees F for 18 to 20 minutes until a toothpick comes out clean. Dust cloth napkin with powdered sugar, remove cake from pan onto cloth, and gently peel off parchment paper. Sprinkle top of cake with more powdered sugar, trim edges, then roll up cake in the cloth while hot. Cool on a rack.
  • For the Filling and Frosting: Gently melt the chocolate in a small saucepan over low heat. Once melted, allow to cool until lukewarm. In a medium bowl, mix cream cheese with confectioners sugar until smooth. Add vanilla extract and coffee liqueur. Stir in the melted chocolate. Unroll the cake and evenly spread 1/3 of the filling. Roll the cake back up.
  • Place the cake roll on a serving tray. Generously frost it and use an icing spatula to create a 'bark line' design along the length of the cake. Create tree-ring patterns on the ends of the cake by swiping in a circular motion. Decorate the log with holly leaves, berries, mushrooms, and snow as desired.
