Chocolate dipped coconut macaroons

Easy-to-make classic macaroons, perfect as petite desserts or for tea time.
Ingredients:
  • 2 egg whites
  • 0.63 gm cream of tartar
  • 70.95 gm caster sugar
  • 25.00 gm ground almonds
  • 4.40 gm vanilla extract
  • 211.25 gm shredded coconut
  • 150g Dark Chocolate Melts
Instructions:
  • First, whip the egg whites until they form a frothy texture. Next, gently fold in the cream of tartar and continue to whisk until soft peaks form. Gradually incorporate the sugar one tablespoon at a time while whisking continuously.
  • Gently mix in the ground almonds and vanilla, followed by the coconut. Drop spoonfuls onto baking paper-lined trays. Bake at 170C for 20 minutes until golden. Allow to cool on a wire rack.
  • Melt the chocolate in a microwave-safe plastic bowl on 50% power using 20-second bursts, stirring between each burst. Stop once 75% of the chocolate has melted; the remaining will melt as you stir.
  • Dip half of each macaroon in rich, velvety chocolate and place on a parchment-lined tray to set. Keep in an airtight container until ready to enjoy.
