Indulgent chocolate gingersnap cookies with molasses, warm spices, and chocolate chips - the ultimate treat with a glass of cold milk.
Ingredients:
  • 0.5 cup butter, melted
  • 0.5 cup packed light brown sugar
  • 0.33333334326744 cup molasses
  • 1 tablespoon water
  • 1.5 cups all-purpose flour
  • 4 teaspoons baking cocoa
  • 1 teaspoon baking soda
  • 0.75 teaspoon ground ginger
  • 0.25 teaspoon ground nutmeg
  • 1.25 cups milk chocolate chips, divided
  • 0.125 cup white sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and line 2 baking sheets with parchment paper.
  • In a large bowl, cream together butter and brown sugar until fluffy. Mix in molasses and water until well combined.
  • Mix together flour, cocoa, baking soda, cinnamon, ginger, and nutmeg in a separate bowl. Gradually incorporate into the creamed butter mixture until smooth.
  • In a microwave-safe bowl, microwave 1 cup of chocolate chips in 15-second intervals, stirring each time, until melted, about 1 to 3 minutes. Mix the melted chocolate into the dough thoroughly.
  • Roll dough into 1-inch balls, coat in white sugar, press a chocolate chip into the center of each ball, leaving a bit of the chocolate chip exposed. Place on baking sheets.
  • Bake in the preheated oven for 10 to 12 minutes until the tops crack slightly. Allow to cool on the baking sheets for 3 minutes before transferring to wire racks to finish cooling.
