No-bake white chocolate lime cheesecake with gingersnap crust, topped with whipped cream, raspberries, and mint. Make ahead for easy entertaining.
Ingredients:
  • 2 cups gingersnap cookie crumbs
  • 2 tablespoons white sugar
  • 5 tablespoons melted butter
  • 1 (.25 ounce) envelope unflavored gelatin
  • 0.66666668653488 cup lime juice
  • 2.5 cups heavy cream, divided
  • 9 ounces white chocolate, chopped
  • 3 (8 ounce) packages cream cheese, softened
  • 2 tablespoons grated lime zest
Instructions:
  • In a large bowl, mix together cookie crumbs and sugar. Add melted butter and combine well. Press mixture into bottom and up the sides of a 10-inch springform pan.
  • Sprinkle gelatin over lime juice in a small bowl and let it soften. Simmer 1/2 cup of whipping cream, then pour over chopped white chocolate. Whisk until smooth. Mix in the softened gelatin. Let cool. Beat 2 cups of cream to stiff peaks in a large bowl.
  • Use an electric mixer to blend the cream cheese and sugar until smooth. Gently incorporate the white chocolate mixture and lime zest. Fold in the whipped cream, then pour the mixture into the crust. Cover with plastic wrap and refrigerate overnight.
