Indulgent low-calorie key lime pie made with Yoplait® Light Thick & Creamy Key lime pie yogurt, fat-free cream cheese, and Cool Whip lite for a creamy, flavorful treat at just 200 calories per serving.
Ingredients:
  • 2 tablespoons cold water
  • 1 tablespoon fresh lime juice
  • 1 1/2 teaspoons unflavored gelatin
  • 4 oz (half of 8-oz package) fat-free cream cheese, softened
  • 3 containers (6 oz each) Yoplait® Light Thick & Creamy Key lime pie yogurt
  • 1/2 cup Cool Whip lite frozen whipped topping, thawed
  • 2 teaspoons grated lime peel
  • 1 reduced-fat graham cracker crumb crust (6 oz)
Instructions:
  • In a small saucepan, combine water and fresh lime juice. Sprinkle gelatin over the lime mixture and allow to sit for 1 minute. Heat on low, stirring constantly until gelatin is fully dissolved. Let cool for about 2 minutes.
  • In a medium bowl, use an electric mixer on medium speed to whip the cream cheese until smooth. Gradually add the mixture of yogurt and lime juice, and continue to beat on low speed until fully blended.
  • Gently incorporate whipped topping and lime peel, then transfer the mixture into the crust. Chill in the refrigerator until firm, approximately 2 hours.
