Effortless Lime Icebox Cake: A refreshing twist on key lime pie using only 5 ingredients, no baking required. Flawlessly easy and irresistibly delicious.
Ingredients:
  • 1 (14-ounce) can sweetened condensed milk
  • 1 cup heavy cream
  • 2 tablespoons sour cream
  • 1/4 cup lime juice
  • 5 ounces Ritz crackers
  • 2 teaspoons lime zest
Instructions:
  • Prepare the filling by combining condensed milk, heavy cream, sour cream, and lime juice in a mixing bowl. Whisk until smooth and thick, approximately 1 minute.
  • Spread half a cup of filling evenly over the bottom of an 8-inch cake or pie pan. Top with a layer of Ritz crackers. Alternate layers of filling and crackers, finishing with a layer of filling. You should have 3 layers of crackers and 4 layers of filling in total. Sprinkle lime zest on top. Enjoy!
  • Wrap loosely with plastic wrap and chill for at least 2 hours or overnight. Serve cold. Store pie in fridge for up to 3 days or in the freezer for up to 1 month. To serve from frozen, thaw for 10 minutes at room temperature.
