Easy weeknight lime sriracha BBQ chicken tacos.
Ingredients:
  • 500g Australian Chicken Tenderloins
  • 1 lime, rind finely grated, juiced
  • 140g yoghurt
  • 60ml sriracha
  • 60ml olive oil
  • 8 corn tortillas
  • 1 large avocado, stoned, peeled, thinly sliced
  • 1 Lebanese cucumber, finely chopped
  • 1 small red onion, finely chopped
  • 125.00 ml chopped coriander
  • 60g jalapeno
Instructions:
  • In a large bowl, mix together the chicken, lime zest, lime juice, half of the yogurt, 2 tablespoons of sriracha or chili sauce, and 2 tablespoons of oil. Season with salt and pepper to taste.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill tortillas in batches for 30 seconds on each side until they are lightly charred. Place the tortillas on a plate and cover them with foil to keep warm.
  • Drizzle the chicken with the remaining oil and grill for 4 minutes on each side, or until golden and cooked through. Allow it to rest for 5 minutes before serving.
  • Combine the rest of the yogurt with half of the remaining sriracha or chili sauce, gently swirling to marble.
  • Place the tortillas on serving plates. Top each tortilla with a dollop of the yogurt mixture. Add avocado, chicken, and the rest of the sriracha or chili sauce on top. Sprinkle with cucumber, onion, coriander, and jalapeño. Season to taste.
  • Drizzle the tacos with the remaining yogurt mixture before serving.
