Beef Bulgogi Korean Tacos

Homemade Korean BBQ Beef Tacos with cilantro-lettuce slaw and Sriracha salsa, served with a refreshing Fizzy Lime SODArita.
Ingredients:
  • 3 medium green onions, chopped
  • 1/4 cup soy sauce
  • 3 tablespoons sugar
  • 2 tablespoons vegetable oil
  • 1 lb beef top sirloin steak, thinly sliced against the grain
  • 1/2 cup thick & chunky salsa
  • 1/2 teaspoon Sriracha sauce
  • 1 tablespoon sugar
  • 2 tablespoons fresh lime juice
  • 1 1/2 teaspoons soy sauce
  • 1 cup fresh cilantro sprigs
  • 1/2 cup thinly sliced red onion
  • 2 cups thinly sliced romaine lettuce
  • 8 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count), heated as directed on package
  • 1 tablespoon sesame seed
Instructions:
  • Combine the beef and marinade ingredients in a 1-gallon resealable plastic bag. Seal the bag and refrigerate for 30 minutes.
  • In a blender, combine all spicy salsa ingredients and blend on medium speed until smooth. Transfer the salsa to a small bowl and set aside. In a large bowl, thoroughly mix all slaw ingredients except lettuce, then set aside.
  • Drain the beef and discard the marinade. Heat a 12-inch nonstick skillet over medium-high heat. Cook the beef in the skillet for 2 to 3 minutes, stirring frequently, until browned. Mix the lettuce with the slaw mixture.
  • Place a generous amount of beef onto the warm tortillas. Drizzle with zesty salsa, add a layer of slaw, and finish off with a sprinkle of sesame seeds.
