Sweet and spicy marinated beef short rib slices, seared and served over rice in a delicious Korean BBQ style dish.
Ingredients:
  • 1.25 pounds boneless beef short ribs, sliced across the grain in 1/8-inch thick slices
  • 4 cloves garlic, finely crushed
  • 0.25 cup grated yellow onion
  • 1 tablespoon freshly grated gingerroot
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon light brown sugar, or to taste
  • 0.33333334326744 cup freshly grated Asian pear
  • 0.25 cup soy sauce
  • 1 tablespoon Korean red pepper flakes (gochugaru)
  • 0.5 teaspoon kosher salt
  • 1 tablespoon vegetable oil, plus more for brushing skillet
  • 2 cups hot steamed rice, or as needed
  • 2 sliced green onion tops for garnish
Instructions:
  • Combine minced garlic, finely grated onion, freshly grated ginger, toasted sesame oil, and rich brown sugar in a mixing bowl. Add in grated ripe pear, savory soy sauce, and a sprinkle of spicy red pepper flakes.
  • Place the meat in the marinade, ensuring it is evenly coated on all sides. Cover the container and let it marinate in the refrigerator for 1 to 2 hours.
  • Season the meat generously with salt and add a light drizzle of vegetable oil, then mix everything together.
  • Prepare the cast iron skillet by brushing it lightly with vegetable oil. Heat the skillet over high heat until very hot. Place the beef in a single layer and cook until the meat caramelizes and moisture evaporates, about 2 to 3 minutes per side. Serve the beef over steaming hot rice and garnish with fresh green onion slices.
