Indulgent chocolate liqueur mousse layered with crispy tortilla chips.
Ingredients:
  • 250g dark chocolate, roughly broken up
  • 4 eggs, separated
  • 50ml Kahlua liqueur
  • 53.75 gm caster sugar
  • 300ml thickened cream, softly whipped
  • 3 burrito tortillas
  • 1 eggwhite, whisked
Instructions:
  • Melt chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and whisk in egg yolks one at a time. Stir in Kahlua until combined.
  • Using an electric mixer, beat eggwhites until soft peaks form. Gradually add 2 tablespoons of sugar, beating until thick and glossy. Carefully fold half of the eggwhite mixture into the chocolate mixture, then fold in the rest.
  • Gently incorporate the whipped cream into the melted chocolate mixture.
  • Divide the mixture evenly among six 3/4-cup ramekins. Chill in the refrigerator for a minimum of 3 hours.
  • Preheat your oven to 180°C and line a baking tray with parchment paper. Cut star shapes from tortillas using a small star biscuit cutter and place them on the tray. Brush the stars with egg white and sprinkle with sugar. Bake for 5 to 10 minutes until they are lightly golden. Allow them to cool before serving alongside chocolate mousse.
