Decadent chocolate layer cake with rich chocolate frosting, perfect for any celebration or indulgent treat.
Ingredients:
  • 300.00 gm self-raising flour
  • 1.25 gm bicarbonate of soda
  • 65.00 gm cocoa powder
  • 200g butter, softened
  • 215.00 gm caster sugar
  • 8.80 gm vanilla essence
  • 3 eggs
  • 195.00 gm buttermilk
  • milk chocolate flakes, to decorate
  • 250g butter, softened
  • 4.40 gm vanilla essence
  • 65.00 gm cocoa powder, sifted
  • 500g icing sugar mixture, sifted
  • 41.20 gm milk
Instructions:
  • First, preheat your oven to 180°C (or 160°C if using a fan-forced setting). Then, generously grease a 6cm-deep, 22cm round cake pan and line both the base and sides with baking paper. Finally, sift flour, bicarbonate of soda, and cocoa into a medium bowl.
  • In a large bowl, cream together butter, sugar, and vanilla until fluffy using an electric mixer. Beat in eggs one at a time. Gradually mix in half of the flour mixture, followed by half of the buttermilk. Repeat with the remaining flour mixture and buttermilk until combined.
  • Spread the mixture evenly in the prepared pan and bake for 40 minutes or until a skewer inserted in the center comes out clean. Allow it to rest in the pan for 10 minutes before turning it out onto a wire rack to cool.
  • Prepare the chocolate icing by combining butter, vanilla, and cocoa in a bowl. Use an electric mixer to beat the mixture until fluffy. Slowly incorporate the icing sugar. Add milk and continue beating for 2 to 3 minutes until the icing is light and fluffy.
  • - With a serrated knife, divide the cake into three equal layers horizontally. - Begin by placing the bottom layer on a plate and evenly spread 1/2 cup of icing over it. - Repeat the same step with the middle layer, then assemble the cake by placing the top layer on top. - Spread the rest of the icing over the top and sides of the cake. - Sprinkle chocolate flakes on top for decoration. - Serve and enjoy!
