Chocolate marshmallow cakes

Fun and easy birthday dessert kids can make together.
Ingredients:
  • 400g good-quality milk or white chocolate, roughly chopped
  • 60g copha, chopped
  • 250g packet shortbread biscuits (we used Scotch Finger), roughly chopped
  • 375.00 ml mini marshmallows
  • 80g Crunchie bar, finely chopped
Instructions:
  • Prepare mini muffin holes by lining 40 x 1 1/2-tablespoon capacity holes with small paper cases. In a heatproof bowl set over a saucepan of simmering water, combine chocolate and copha. Stir constantly with a metal spoon until melted and smooth. Remove from heat and let it cool for 10 minutes.
  • In a large glass bowl, combine biscuits, marshmallows, and Crunchie. Pour the chocolate mixture over them and stir until fully mixed. Spoon the mixture into paper cases and chill in the refrigerator for 2 hours until firm.
