Decadent chocolate crazy cake with fluffy chocolate-marshmallow frosting. No eggs or dairy needed - all mixed and baked in one dish!
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 cup white sugar
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 5 tablespoons vegetable oil
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla extract
  • 1 cup water
  • 2 (1 ounce) squares unsweetened chocolate, chopped
  • 0.25 cup margarine
  • 0.25 cup water
  • 2 cups confectioners' sugar
  • 1 cup miniature marshmallows
Instructions:
  • Preheat oven to 350 degrees F (175 degrees C). Combine flour, sugar, cocoa, baking soda, and salt in a sifter. Sift the dry ingredients into a 9-inch square pan.
  • Create a deep well in the center and pour in the oil, vinegar, and vanilla. Top it off by drizzling water over the mixture and blend it all together using a fork until you achieve a smooth consistency.
  • Place your masterpiece into the warm embrace of the oven for 30 to 35 minutes, or until a toothpick inserted into the center emerges spotless. Let it cool gracefully.
  • To prepare the frosting: In a saucepan, meld chocolate, margarine, and water on gentle heat until velvety. Remove from heat, blend in vanilla and confectioners' sugar, then gently mix in miniature marshmallows. Spread over the cake.
