Rocky road ripple cake recipe

Indulge in a heavenly fusion of rocky road and ripple cake with gooey marshmallows, crunchy peanuts, and infused cherry flavor in a no-bake delight. Just chill for 6 hours for creamy layers between biscuits, topped with chocolate drizzle. Easy wow-factor!
Ingredients:
  • 600ml ctn thickened cream
  • 55g (1 ⁄4 cup) caster sugar
  • 30g (1 ⁄4 cup) cocoa powder, sifted
  • 80g (1 ⁄2 cup) unsalted roasted peanuts, coarsely chopped, plus extra, to decorate
  • 70g (1 ⁄3 cup) glacé cherries, coarsely chopped
  • 30g (1 ⁄2 cup) mini marshmallows, halved
  • 250g pkt Arnott’s Choc Ripple biscuits
  • 150g dark chocolate, chopped
  • Pink and white marshmallows, to decorate
  • maraschino cherries, to decorate
Instructions:
  • In a large bowl, use electric beaters to whip the cream, sugar, and cocoa until stiff peaks form. Then transfer half of the mixture to another bowl and gently fold in the peanuts, glacé cherries, and mini marshmallows until well combined.
  • Spread a thin layer of the plain cream mixture in the center of a large serving plate (about 25cm long). Spread 1 tablespoon of the peanut cream mixture on 1 biscuit, then sandwich with another. Continue layering with 4 more biscuits and more peanut cream to make a stack of 6 biscuits. Place the stack on its side at the beginning of the cream mixture strip on the plate. Repeat layering with more biscuits and remaining peanut cream to create 3 more stacks, placing each behind the last to form a log. Set aside 3 remaining biscuits.
  • Smooth the remaining plain cream mixture over the log to completely cover it. Loosely cover with foil and refrigerate for 6 hours or overnight to set.
  • In a small microwave-safe bowl, melt the chocolate on High in 30-second intervals, stirring each time, until smooth. Let it cool slightly before using.
  • Drizzle the luscious melted chocolate over the cake, layer the reserved biscuits cut in half on top, and generously sprinkle with marshmallows, maraschino cherries, and extra peanuts. Serve promptly to enjoy the delicious combination of flavors and textures.
