Indulgent twist on classic trifle: Rocky road delight.
Ingredients:
  • 300g cherries, pitted
  • 75g caster sugar
  • 6 gelatine leaves
  • 2kg Brandy Flavoured Custard
  • 540g Make at Home Chocolate Mud Cake, cut into 4cm pieces
  • 300ml thickened cream, whipped
  • 190g pkt chocolate-coated almonds, halved
  • 50g marshmallow
  • 250g rose-flavoured Turkish delight, coarsely chopped
  • Shaved dark chocolate, to serve
Instructions:
  • In a saucepan over medium heat, cook the cherries and sugar until the cherries slightly collapse and the syrup thickens, about 8 minutes. Let it cool and then drain the cherries, keeping the syrup aside.
  • 1. Start by placing the gelatin in a bowl and covering it with cold water. Let it sit for 5 minutes to soften, then drain and gently squeeze out any excess water. 2. Transfer the gelatin to a clean saucepan and melt it over low heat. 3. Add the custard and whisk until smooth. 4. Transfer the mixture to a heatproof bowl, cover, and chill for 2 hours until almost set. 5. Give it a final whisk until smooth before serving.
  • Layer half of the cake at the bottom of a 12-cup (3L) glass serving dish. Spread a layer of cream, then top with half of the cherries, almonds, marshmallows, and one-third of the Turkish delight. Drizzle with some of the reserved syrup. Add half of the custard mixture on top.
  • Layer the remaining cake, cherries, and half of the remaining Turkish delight. Drizzle with a bit more reserved syrup, then spread the remaining custard mixture on top. Finish by adding the rest of the Turkish delight, almonds, and marshmallows. Garnish with shaved chocolate before serving.
