Triple decker mini egg rocky road recipe

Elevate your Easter eggs with a decadent layered rocky road filled with mini marshmallows and your favorite chocolate eggs for a colorful and indulgent treat.
Ingredients:
  • 2 x 180g pkt milk chocolate, finely chopped
  • 12.00 Arnott’s Raspberry Shortcake biscuits, coarsely chopped
  • 6.00 x 41.5g pkt Mini Eggs, coarsely chopped
  • 80.00 ml mini marshmallows
  • 20.80 gm shredded coconut
  • 4.00 x 180g pkt white chocolate, finely chopped
  • Oil-based pink food colouring, to tint (see note)
  • Oil-based blue food colouring, to tint (see note)
Instructions:
  • Prepare the slice pan by greasing it and lining the base and sides with baking paper, making sure to leave a 2cm overhang above the long sides.
  • 1. Place milk chocolate in a microwave-safe bowl. Microwave on High for 1-2 minutes, stirring halfway through, until melted. Pour into the prepared pan, then spread with a palette knife. Top evenly with chopped biscuits, chocolate eggs, mini marshmallows, and coconut. Chill in the fridge for 15 minutes until the chocolate sets.
  • For the pink layer, heat the white chocolate in a microwave-safe bowl until melted, stirring halfway through. Tint it pink with food coloring, stir well, and let it cool for 5 minutes.
  • Drizzle the pink chocolate mixture over the milk chocolate layer, carefully tilting the pan to spread it out. Sprinkle with the chopped biscuit, chocolate eggs, mini marshmallows, and coconut. Chill in the fridge for 15 minutes until the chocolate is set.
  • For the blue layer, melt the white chocolate in a microwave-safe bowl by microwaving on High for 1-2 minutes, stirring halfway through. Add blue food coloring and let it cool for 5 minutes. Pour over the pink layer, spreading evenly, and top with chocolate eggs. Chill in the fridge for 30 minutes until set.
  • Place the slice on a serving board and let it rest for 10-15 minutes to slightly soften. Cut it into pieces using a large knife.
