Party Ribbon Sandwiches

Delicious triple-decker sandwiches with a variety of fillings and breads.
Ingredients:
  • 1 cup frozen cooked deveined peeled salad shrimp, thawed
  • 1 tablespoon finely chopped fresh parsley
  • 1 teaspoon lemon juice
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried dill weed
  • 1/4 cup mayonnaise or salad dressing
  • 1 cup chopped smoked cooked turkey
  • 1/2 teaspoon curry powder
  • 1/3 cup mayonnaise or salad dressing
  • 1/4 cup finely chopped celery
  • 1 package (3 oz) cream cheese, softened
  • 1 cup shredded Mexican cheese blend
  • 1/4 cup sliced Spanish olives
  • 8 slices white bread, crusts removed
  • 8 slices whole wheat bread, crusts removed
Instructions:
  • Combine all shrimp filling ingredients in a food processor and process until the mixture is creamy. Remove from processor and set aside.
  • Combine all turkey filling ingredients (excluding celery) in a food processor and pulse for 3 to 5 seconds until creamy. Fold in the celery and transfer the mixture from the food processor to a separate bowl.
  • Combine all cheese and olive filling ingredients, except for olives, in a food processor. Process for 3 to 5 seconds until the mixture is creamy. Gently fold in the olives.
  • Begin by laying one slice of white bread on a cutting board. Spread 5 tablespoons of cheese and olive filling evenly over the bread. Place one slice of wheat bread on top and spread it with 1/4 cup of turkey filling. Top with another slice of white bread and spread on 1/4 cup of shrimp filling. Add one more slice of wheat bread. Repeat this layering process three more times to create a total of 4 sandwich stacks. Wrap each stack in plastic wrap and refrigerate for at least 4 hours, or up to 24 hours.
  • To present, elegantly halve each sandwich stack lengthwise, then slice crosswise into 4 perfect portions.
