Elevate cake mix with our decadent rocky road cookies.
Ingredients:
  • 440g packet Green’s Classic Chocolate Cake mix, Icing Mix included
  • 70g (1 ⁄3 cup) dark choc bits, plus extra, to decorate
  • 55g (1 ⁄3 cup) salted peanuts, coarsely chopped, plus extra, coarsely chopped, to decorate
  • 25g (1 ⁄3 cup) shredded coconut, plus extra, to decorate
  • 20g (1 ⁄3 cup) mini marshmallows, plus extra, to decorate
  • 75g Butter, melted, cooled
  • 1 egg, lightly whisked
  • 60ml (1 ⁄4 cup) boiling water
Instructions:
  • Preheat your oven to 180°C (160°C fan forced) and prepare 2 baking trays with parchment paper.
  • Combine the packet cake mix with choc bits, peanuts, coconut, and marshmallows in a large bowl. Create a well in the center and add the butter and egg. Stir with a spatula until fully combined.
  • Shape heaping spoonfuls of the mixture into balls and arrange on prepared trays, giving space for expansion. Gently press down to slightly flatten and bake for 10 minutes. Let them rest on the trays for 5 minutes to cool slightly before moving to wire racks to cool completely.
  • In a bowl, combine the icing mix and boiling water until smooth. Drizzle the icing over the biscuits, then quickly sprinkle with additional chocolate bits, peanuts, coconut, and marshmallows. Allow to set for 15 minutes before serving.
