Chocolate Mascarpone Layer Cake

Decadent layered cake with white and dark chocolate mascarpone mousse - a luxurious gourmet indulgence.
Ingredients:
  • 1 teaspoon unsalted butter
  • 1.125 cups chopped dark chocolate
  • 1 cup unsalted butter
  • 1 tablespoon instant coffee
  • 5 large eggs, separated
  • 0.33333334326744 cup brown sugar
  • 1 pinch salt
  • 5 tablespoons warm water
  • 2 tablespoons cocoa powder
  • 0.875 cup light cream
  • 5 ounces mascarpone cheese
  • 1 tablespoon white sugar
  • 1 cup chopped white chocolate
  • 2 teaspoons gelatin powder
  • 3 tablespoons water
Instructions:
  • Preheat the oven to 325°F (165°C) and generously butter a springform pan.
  • Melt dark chocolate and butter in a double boiler over simmering water, stirring frequently until smooth, about 5 minutes. Remove from heat, mix in coffee, and let cool for 5 minutes. Whisk in egg yolks until well combined.
  • In a separate bowl, whisk egg whites, brown sugar, and salt until they form firm snow peaks. Gently fold into the chocolate mixture. Pour the batter into the pan and smooth the top.
  • Bake until firm in the preheated oven for around 20 minutes, then allow to cool for 1 hour.
  • While the first layer cools, move on to the second layer. Combine water and cocoa powder in a bowl. Gently melt dark chocolate in a double boiler over simmering water for approximately 5 minutes. Remove from heat.
  • Combine cream, mascarpone cheese, sugar, and salt in a bowl, then whisk vigorously. Stir in cocoa powder mixture and melted chocolate. Pour the mixture over the first layer and chill until firm, at least 30 minutes.
  • Prepare the top layer by melting white chocolate in a double boiler over simmering water for approximately 5 minutes. Remove from heat.
  • First, combine the gelatin powder with water and allow it to sit for 5 minutes. Then, gently warm the mixture in a double boiler until the gelatin is completely melted, which should take 2 to 3 minutes. Finally, stir the melted gelatin into the chocolate until well combined.
  • Whisk cream until soft peaks form, then blend in mascarpone cheese until smooth. Gently fold in the chocolate-gelatin mixture and pour over the second layer. Chill cake until firm, for a minimum of 3 hours.
