Chocolate mascarpone lattice slice

Indulge in rich and satisfying chocolate cravings with this easy recipe for all ages.
Ingredients:
  • 4 egg yolks
  • 35g cornflour
  • 55g caster sugar
  • 300ml double cream
  • 100g dark chocolate, melted and cooled
  • 250g mascarpone
  • 1 x 200g packet Lattice biscuits
  • cocoa, for dusting
  • Blueberries (optional), to serve
  • Whipped cream, to serve
Instructions:
  • Prepare an 18cm square tin by lining its base and sides with non-stick baking paper, ensuring there is overhang on all sides. In a bowl, whisk together the egg yolks, cornflour, and sugar until smooth. Gradually add the cream while whisking. Cook the mixture in a saucepan over medium heat, whisking continuously for 3-5 minutes until the custard just begins to boil. Remove from heat and whisk until the custard is thick and smooth. Transfer the mixture to a bowl, add the chocolate and mascarpone, and whisk until smooth. Allow the mixture to cool slightly.
  • Place 9 biscuits flat-side up in a single layer at the base of the tin. Cover with custard and add another layer of 9 biscuits lattice-side up. Refrigerate for 2 hours until firm. To serve, slice between the biscuits, dust with cocoa, and top with cream and blueberries.
