Indulgent chocolate cookies with creamy coffee filling - ideal for a delightful afternoon pick-me-up.
Ingredients:
  • 250g butter, at room temperature
  • 120g (2/3 cup) icing mixture
  • 200g (1 1/3 cups) plain flour
  • 50g (1/3 cup) cornflour
  • 35g (1/3 cup) cocoa powder
  • Extra icing mixture, to dip
  • 40g butter, at room temperature
  • 60g (1/3 cup) icing mixture, sifted
  • 1 tsp instant coffee powder
Instructions:
  • Preheat oven to 180°C and line 2 baking trays with non-stick baking paper.
  • In a large bowl, use electric beaters to whip the butter and icing mixture until pale and creamy.
  • Combine the plain flour, cornflour, and cocoa by sifting them into a bowl. Gradually add the flour mixture to the butter mixture, beating on low speed until just combined between each addition.
  • Take heaped teaspoons of the dough and form them into balls. Arrange them on the lined trays, leaving about 5cm of space in between (as the biscuits will expand while baking). Dip the end of a fork into the extra icing mixture and gently press down on each ball to flatten it into a 1cm-thick, 3cm disc.
  • Bake in preheated oven for 20 minutes, swapping trays halfway through, until cooked through. Let cool on a wire rack for 5 minutes before transferring. Repeat with remaining dough.
  • In a medium bowl, use electric beaters to whip together butter, icing mixture, and coffee until light and creamy. Spread 3/4 teaspoon of the mixture onto half of the biscuits, then delicately press the remaining biscuits on top to create sandwiches.
