Decadent chocolate mousse slices irresistible to all - a tempting test of self-control!
Ingredients:
  • 225.00 gm self-raising flour
  • 90.00 gm brown sugar
  • 200g butter, melted
  • 32.50 gm cocoa powder, sifted
  • 300g dark chocolate, chopped
  • 2 eggs, separated
  • 189.38 gm thickened cream, whipped
  • Dark chocolate, shaved, to serve
  • Double cream, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and prepare an 18cm x 28cm slice pan by greasing it and lining the base and sides with baking paper, leaving a 3cm overhang on all sides.
  • In a bowl, mix flour, sugar, butter, and cocoa powder. Press the mixture over the base of the prepared pan. Bake for 20-25 minutes, or until firm to the touch. Allow to cool completely.
  • Create a luscious mousse by placing chocolate in a microwave-safe bowl. Microwave on medium power for 1 to 2 minutes until smooth, stirring every 30 seconds with a metal spoon. Allow the chocolate to cool before proceeding.
  • Combine egg yolks with chocolate, gently stirring until mixed. Fold in cream. With an electric mixer, beat egg whites until soft peaks form, then gently fold into the chocolate mixture. Pour over the base, level the top with a spatula, and refrigerate for 6 hours or until set. Cut into squares and serve.
