Chocolate mousse squares

Delightful afternoon tea suggestion.
Ingredients:
  • 1 1/2 x 200g packets Lattice biscuits
  • 9.00 gm powdered gelatine
  • 40.00 gm boiling water
  • 200g milk chocolate, chopped
  • 60g butter, chopped
  • 252.50 gm thickened cream
  • 2 egg yolks
Instructions:
  • Prepare a 20cm x 30cm lamington pan by greasing it and lining it with baking paper, leaving a 2cm overhang on the long sides. Place half of the biscuits on the base of the pan, cutting them to fit if needed.
  • Pour piping hot water into a heatproof jug and gently sprinkle gelatine over the water. Stir continuously until the gelatine completely dissolves.
  • Combine chocolate, butter, and 1/4 cup cream in a microwave-safe bowl. Microwave on HIGH for 1 minute 30 seconds, stirring every 30 seconds with a metal spoon until smooth. Let it sit for 5 minutes before using.
  • Combine the yolks with the chocolate mixture, stirring until smooth. Then, mix in the gelatine until fully incorporated.
  • With an electric mixer, whip the cream until soft peaks form. Gently fold the cream into the chocolate mixture. Pour the mixture over the biscuit base and arrange the remaining biscuits on top, cutting to fit. Cover and refrigerate for 4 hours until set. Cut into squares and serve.
