Chocolate mousse

Indulge in a classic and decadent chocolate mousse.
Ingredients:
  • 200g milk chocolate, or dark chocolate, broken
  • 4 eggs, separated
  • 20.00 ml Kahlua, or other liqueur of choice
  • 300ml carton thickened cream
  • Whipped cream, extra, to serve
  • Chocolate, grated, to serve
Instructions:
  • Melt chocolate in a heat-resistant bowl over gently simmering water, stirring for 2-3 minutes. Remove from heat when melted.
  • Mix together the egg yolks and Kahlua until smooth. Allow the mixture to cool slightly before proceeding.
  • Whip cream in a large bowl until soft peaks form, then gently fold it through the chocolate mixture.
  • In a pristine, dry bowl, whip egg whites until soft peaks are achieved.
  • Gently mix egg whites into the chocolate mixture until fully incorporated. Divide the mousse into 4-6 individual dishes or one large serving dish. Refrigerate overnight until set. Top with whipped cream and grated chocolate before serving.
