Chocolate orange and almond puddings

Indulge in our decadent double-chocolate dessert, a true chocolate lover's dream.
Ingredients:
  • 100g dark chocolate, coarsely chopped
  • 125ml (1/2 cup) pouring cream
  • 30g unsalted butter
  • 100g (1 cup) almond meal
  • 75g (1/2 cup) self-raising flour, sifted
  • 100g (1/2 cup, firmly packed) dark brown sugar
  • 2 eggs, lightly whisked
  • 60ml (1/4 cup) fresh orange juice
  • 2 tsp finely grated orange rind
  • 8.80 gm vanilla essence
  • 100g unsalted butter, extra, melted
  • 100g milk chocolate, coarsely grated
  • 250g ctn mascarpone
  • 5.00 gm cocoa powder
  • 6.00 gm pure icing sugar
  • Icing sugar, to dust
Instructions:
  • 1. Preheat the oven to 170°C. Melt the dark chocolate, cream, and butter in a saucepan over medium heat for 3 minutes until smooth. Divide the mixture among four 250ml (1-cup) capacity ovenproof cups or ramekins.
  • In a bowl, mix almond meal, flour, and sugar. Create a well in the center and add egg, orange juice, orange rind, vanilla, and extra butter. Gently fold with a large metal spoon until almost combined. Then, fold in milk chocolate. Divide the mixture into cups or ramekins, place them on a baking tray, and bake for 35-40 minutes until a skewer comes out clean when inserted into the centers.
  • Soften the mascarpone by gently stirring it in a bowl. Combine cocoa powder and icing sugar in another bowl, then fold them into the mascarpone to create a swirled effect.
  • Sprinkle with a dusting of icing sugar and finish with a dollop of mascarpone mixture.
