Chocolate pavlova

Ingredients:
  • 6 egg whites
  • 322.50 gm caster sugar
  • 40.00 gm Cocoa powder
  • 2 tsp white vinegar
  • 300ml thickened cream
  • 300g frozen mixed berries, thawed
Instructions:
  • Preheat your oven to 120C (fan forced) and draw a 20cm circle on baking paper using a marking pen. Then, place it on a baking tray.
  • Using an electric mixer, whip the egg whites until soft peaks form. Gradually add caster sugar and beat for 10 minutes until all the sugar is dissolved. Fold in sifted cocoa and white vinegar.
  • Spread the mixture evenly onto the circle using a spoon, then place the tray in the preheated oven. Bake for 75 minutes, or until the top is firm. Once done, turn off the oven and allow the pavlova to cool inside with the door slightly open.
  • After the pavlova has cooled, generously spread whipped thickened cream over it and artfully arrange defrosted mixed berries on top. For an extra touch of decadence, elegantly drizzle melted dark chocolate or a luscious fruit sauce over the top.
