Delicious no-bake energy bites made with raisin puree, oats, applesauce, peanuts, and chocolate chips.
Ingredients:
  • 1.5 cups quick-cooking oats, divided
  • 1 cup raisins, divided
  • 0.5 cup creamy natural peanut butter
  • 2 tablespoons applesauce, or more as needed
  • 0.5 teaspoon vanilla extract
  • 0.33333334326744 cup miniature semisweet chocolate chips
  • 2 tablespoons unsalted peanuts
Instructions:
  • Process 1/2 cup oats in a food processor until finely ground; then, transfer to a bowl.
  • In a food processor, blend 1/2 cup raisins until thick and paste-like. Add peanut butter, applesauce, brown sugar, vanilla extract, and cinnamon. Blend until smooth. Mix in ground oats until mixture starts to clump together. If needed, add more applesauce for moisture.
  • Pour the raisin mixture into a bowl, then combine it with the remaining oats, raisins, chocolate chips, and peanuts. Shape the mixture into small balls using a rounded tablespoon.
