Raw chocolate peanut brownies

Indulge guilt-free in these Raw Chocolate Peanut Brownies.
Ingredients:
  • 90g (3/4 cup) walnut halves
  • 20.00 ml chia seeds
  • 30g (1/4 cup) cacao powder
  • 85g (1/2 cup) seedless raisins
  • 150g fresh dates, pitted
  • 30g 85% dark chocolate, chopped
  • 50g (1/2 cup) rolled oats
  • 100g (2/3 cup) unsalted peanuts
  • 90g (1/3 cup) peanut butter
  • 200g fresh dates, pitted
Instructions:
  • Place a piece of baking paper in a 19cm square baking tin, leaving extra paper on two opposite sides to easily lift the bars out later.
  • Combine walnuts, chia seeds, and cacao in a food processor until finely chopped. Add raisins and process until mixed. Gradually add dates with the motor running until mixture starts to come together. Use hands to fully combine mixture. Press into tin and chill until firm.
  • While waiting, combine oats and peanuts in a food processor. Add peanut butter and process until well mixed. Gradually add dates with the processor running until a cohesive mixture forms. Use your hands to ensure everything is well combined. Spread the mixture over the chocolate layer, using the back of a spoon to flatten it. Refrigerate until set.
  • Melt chocolate in a small bowl over simmering water, making sure not to touch the water. Stir until smooth. Drizzle over the brownie, chill until set, then cut into 16 squares. Use paper handles to lift brownie out of the tin before trimming the edges.
