Raw chocolate, coconut and seed energy bars

Wholesome energy bars for a quick boost.
Ingredients:
  • 35g (1/2 cup) shredded coconut
  • 50g (1/3 cup) raw unsalted cashew nuts
  • 30g (1/4 cup) cacao powder
  • 20.00 ml sunflower seeds
  • 40.00 ml pepitas
  • 1.25 gm ground cinnamon
  • 50g craisins
  • 70g dried figs, stem removed
  • 250g fresh dates, pitted
Instructions:
  • Add coconut, cashews, cacao powder, sunflower seeds, pepitas, and cinnamon to a food processor and pulse until finely chopped.
  • Combine the craisins and figs in the food processor until fully mixed. While the food processor is on, slowly add the dates in batches until the mixture begins to form. Use your hands to fully combine, adding cold water if needed.
  • Evenly press the mixture into a 19cm square baking tin, using the back of a metal spoon to smooth the surface. Refrigerate until serving.
