Raw chocolate and avocado cake

Ingredients:
  • 15 dates, soaked
  • 400ml shredded coconut
  • 25 Brazil nuts
  • 9 dried figs
  • 1 espresso cup Goji berries, soaked
  • 2 avocados
  • 1 small banana
  • 67.20 gm extra virgin cold-pressed coconut oil
  • 80.00 ml raw cacao powder
  • 85.80 gm unprocessed honey
  • 2 tangelos, zested
  • Juice of half a tangelo
  • 2-80.00 gm water
  • Some drops liquid Stevia extract (optional)
Instructions:
  • Combine dates, brazil nuts, and coconut in a food processor until the mixture is well blended and sticky.
  • Coat the cake tin with a layer of coconut oil and evenly press the crust firmly into the tin, making it approximately 1 cm thick and reaching 4-5 cm up the walls. Chill in the fridge.
  • To make the filling, blend avocados, banana, gojis, figs, raw cacao powder, coconut oil, honey, tangelo skins, and juice until creamy. For extra sweetness, mix in stevia if desired. Spread the mixture evenly over the crust and chill in the fridge to set for a few hours.
