Chocolate Peppermint Tarts

Make irresistible mini fudgy peppermint treats using simple cookie mix and frosting.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Double Chocolate Chunk Cookie Mix
  • 3 tablespoons vegetable oil
  • 1 tablespoon water
  • 1 egg
  • 1/2 teaspoon peppermint extract
  • 2 1/2 cups powdered sugar
  • 1/4 cup crushed peppermint candies (about 14)
  • 3 tablespoons butter or margarine, softened
  • 3 to 4 tablespoons milk
  • 2 to 3 drops red food color
  • Powdered sugar
Instructions:
  • Grease 24 mini muffin cups with cooking spray. Follow the directions on the package to prepare the cookie dough, but use 3 tablespoons of oil, 1 tablespoon of water, 1 egg, and peppermint extract. Shape the dough into 24(1-inch) balls and place each ball in a muffin cup.
  • Bake at 375° F for 8 to 10 minutes until set. Quickly create an indentation in the center of each cookie using the end of a wooden spoon to form a cup. Allow to cool for 30 minutes. Remove from pan and cool completely.
  • Combine powdered sugar, crushed peppermint candies, butter, milk, and red food color in a medium bowl. Use an electric mixer on medium speed to beat until smooth and creamy. Transfer the frosting into a decorating bag fitted with a large star tip (#5). Pipe the frosting into each cookie cup and sprinkle with powdered sugar. Chill in the refrigerator before serving.
