Chocolate pots

Decadent chocolate pots: Crunchy on top, gooey inside, and filled with rich, quality chocolate for a truly indulgent experience.
Ingredients:
  • 300 g quality dark chocolate (70%)
  • 200 g unsalted butter
  • 300 g golden caster sugar
  • 5 large free-range eggs
  • 8 clementines
  • 2 tablespoons golden caster sugar
  • 12 teaspoons crème fraîche
Instructions:
  • - Preheat the oven to 160ºC/325ºF/gas 3. - Break the chocolate into pieces and melt it with butter and a pinch of sea salt in a heatproof bowl over simmering water. Let it cool for 15 minutes. - Whisk sugar and eggs until fluffy and thick in a separate bowl. - Pour the chocolate mixture into the eggs while constantly whisking until combined. - Divide the mixture into 12 small ovenproof cups or ramekins and place them in a roasting tray. - Fill the tray with boiling water halfway up the cups. - Bake for 25 minutes, then let sit for 15 minutes before serving. - Make the clementine syrup by boiling clementine juice and sugar until thickened. - Serve the chocolate pots at room temperature with a dollop of crème fraîche and a drizzle of syrup.
