Chill out with refreshing semi-freddo on a sizzling day.
Ingredients:
  • 6 eggs, separated
  • 141.90 gm caster sugar
  • 252.50 gm thickened cream
  • 20.00 gm cocoa powder
  • 62.50 gm warm water
  • fresh berries, to serve
Instructions:
  • With a hand mixer, whip egg yolks and sugar in a large bowl until pale and creamy. Clean and dry the beaters. Beat the egg whites until soft peaks form, then gently fold them into the egg yolk mixture until just combined.
  • In a bowl, whip cream with beaters until soft peaks form. Combine cocoa and warm water in a small bowl, then stir into the whipped cream.
  • Gently incorporate chocolate cream into egg mixture until blended. Transfer to a 4-cup airtight container. Freeze for 3 hours or until solid. Enjoy with fresh fruit.
