Festive chocolate shortbread treats, perfect for gifting!
Ingredients:
  • 300g unsalted butter
  • 220g caster sugar
  • 375g plain flour
  • 50.00 gm good-quality cocoa powder
  • Icing sugar, to dust
Instructions:
  • Prepare the 18cm x 28cm lamington pan by greasing and lining its base and sides. In a bowl, use electric beaters to cream together the butter and sugar until pale. Add in the flour, cocoa, and soda, and mix slowly until just combined. Spread the mixture in the pan and smooth it with a spatula. Use a fork to prick the surface all over. Chill in the fridge for 15 minutes before proceeding.
  • 1. Preheat the oven to 180°C. 2. Bake the shortbread for 25 minutes or until it is firm to the touch. 3. While the shortbread is still warm, carefully score it into 12 rectangles. 4. Allow it to cool slightly, then remove from the pan and cut into 12 pieces. 5. Dust the shortbread with icing sugar before serving. 6. Store the shortbread in an airtight container where it will keep for 3-4 days.
