Allspice-infused shortbread fingers that keep them coming back.
Ingredients:
  • 250g butter, at room temperature
  • 107.50 gm caster sugar
  • 500.00 ml plain flour
  • 42.90 gm rice flour
  • 7.50 gm MasterFoods® All Spice Ground
  • 65.00 gm NESTLÉ BAKERS' CHOICE Cocoa
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease and line a 28cm x 18cm slice pan with non-stick baking paper for easy release.
  • Cream the butter and sugar in a bowl using electric beaters until light and fluffy. Add the flours, allspice, and cocoa by sifting them in, then beat gently until just mixed. Use your hands to bring the mixture together until smooth. Firmly press the mixture into the bottom of the prepared pan and smooth the top. Prick all over with a fork and chill for 15 minutes.
  • Bake the shortbread for 30 minutes or until it's just firm to the touch in the center. While still warm, score it into 16 fingers using a knife. Let it cool in the pan, then carefully remove and cut along the score lines to create 16 fingers. Serve and enjoy!
