Ginger cream truffles

Delicious ginger cream cheese truffles - an irresistible treat for unexpected guests.
Ingredients:
  • 250g block cream cheese, softened
  • 150g packet shortbread cream biscuits, coarsely chopped
  • 62.50 ml finely chopped glacé ginger
  • 250g white chocolate melts
  • 1 1/2 - 127.50 gm desiccated coconut
Instructions:
  • Combine the cream cheese, biscuits, and ginger in a bowl until well mixed. Roll into teaspoon-sized balls and chill on a paper-lined tray until firm.
  • Gently melt two thirds of the chocolate in a bowl over simmering water. Remove from heat. Add the remaining chocolate and stir until smooth. Cool slightly.
  • Put on disposable gloves and coat each ball with melted chocolate by rolling it in your hands, then cover it with coconut. Chill until firm. Keep in an airtight container in the refrigerator until ready to serve.
