Chocolate sorbet with choc walnut soil and orange syrup

Decadent dessert featuring dark chocolate and orange with a unique choc walnut finish.
Ingredients:
  • 500.00 gm water
  • 161.25 gm caster sugar
  • 42.90 gm Cocoa
  • 50g 70% Dark Baking Chocolate, broken into pieces
  • 125g butter
  • 70.95 gm caster sugar, extra
  • 187.50 ml plain flour
  • 32.50 gm Cocoa
  • 75.90 gm chopped toasted walnuts
  • 2 navel oranges, thinly sliced
  • 112.50 gm sugar
  • 82.50 gm water, extra
  • 86.63 gm orange juice, freshly squeezed
  • 2 x 5cm strips orange rind
Instructions:
  • In a saucepan, mix water, caster sugar, and cocoa and bring to a gentle boil, stirring until the sugar dissolves. Simmer for 5 minutes, then take off the heat and stir in the dark chocolate. Allow to cool, chill, churn in an ice cream maker following the instructions, then transfer to a loaf pan, cover, and freeze.
  • Whip together the butter and additional sugar until creamy. Mix in the sifted flour and cocoa, followed by the walnuts. Gently press the mixture into a 28cm x 18cm slice pan lined with baking paper. Bake in a preheated oven at 190°C for 20 minutes or until a toothpick comes out clean. Allow it to cool in the pan on a wire rack. Crumble the slice and store it in an airtight container until ready to enjoy.
  • Place beautifully arranged orange slices on a greased cooling rack set over a baking tray. Bake in a moderately slow oven at 140 degrees Celsius for 45 minutes, or until the oranges are dry but retain their vibrant color. Once cooled, store the slices in an airtight container in the refrigerator until ready to use.
  • In a saucepan, mix sugar, additional water, juice and rind. Stir occasionally while cooking until the sugar dissolves. Boil for 3-4 minutes until reduced by half. Strain, cool, cover, and refrigerate until needed.
  • Ladle the sorbet into individual bowls or glasses. Garnish with the Choc Walnut Soil, orange slices, and a generous drizzle of orange syrup.
