Easter morning treat: fluffy souffle bursting with berries and creamy goodness
Ingredients:
  • 4 eggs, separated
  • 40.00 gm caster sugar
  • 10.00 gm NESTLÉ BAKERS' CHOICE Cocoa
  • 20.00 ml plain flour
  • 100g dark chocolate, finely chopped
  • 20g butter
  • Fresh berries, to serve
  • Cream, to serve
  • Icing sugar, to dust
Instructions:
  • Preheat oven to 200°C (180°C fan-forced).
  • Mix together the yolks, caster sugar, cocoa powder, plain flour, and finely chopped dark chocolate until well combined and smooth.
  • Beat the egg whites with electric beaters until soft peaks form, then gently fold them into the yolk mixture.
  • In a sizzling non-stick ovenproof frying pan (16cm base measurement), melt 20g butter over high heat. Pour in the egg mixture and cook for 3 minutes.
  • Move the dish to the oven and bake for 15 minutes. Quickly scatter the berries on top, gently fold the dish, and transfer it to a serving plate. Top with a dollop of cream and a sprinkle of icing sugar. Serve immediately.
