Decadent chocolate treats that are light and irresistible.
Ingredients:
  • 10g butter, melted, to grease
  • 70.95 gm caster sugar
  • 30g butter
  • 20.00 ml plain flour
  • 193.13 gm milk
  • 6 eggs, at room temperature, separated
  • 150g dark chocolate, melted
  • double cream, to serve
Instructions:
  • Position the oven rack in the lower section of the oven. Place a large baking tray on the rack. Preheat the oven to 200°C/180°C fan-forced. Brush six 200ml ramekins with melted butter in an upward motion. Sprinkle each ramekin with 2 tablespoons of sugar to coat, then shake out any excess sugar.
  • In a small, heavy-based saucepan over medium heat, melt butter until foamy. Add flour and stir continuously for 1 to 2 minutes until mixture bubbles. Remove from heat and slowly whisk in milk. Return to heat, stirring for 2 to 3 minutes until mixture boils and thickens. Transfer to a large bowl and mix in remaining sugar, 2 egg yolks, and chocolate. Let it sit for 5 minutes before using.
  • With an electric mixer, whip 6 egg whites until soft peaks form. Then gently fold in one-quarter of the whipped egg whites into the chocolate mixture using a metal spoon. Finally, carefully fold in the rest of the whipped egg whites until fully incorporated.
  • Fill the prepared ramekins with the mixture, leaving a 1cm space below the rim. Tap each ramekin gently on the work surface to eliminate air pockets and smooth the tops. Then place the ramekins on a hot baking tray and bake for 18 to 20 minutes until puffed. Serve with double cream.
