Ingredients:
  • 1.3333333730698 cups spelt flour
  • 0.75 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.125 teaspoon salt
  • 1.5 cups white sugar
  • 3 tablespoons coconut oil, melted
  • 2 eggs
  • 0.75 teaspoon vanilla extract
  • 1 cup coconut milk
  • 1 cup chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin pan with paper or foil liners.
  • Combine flour, cocoa, baking powder, baking soda, and salt by sifting them together in a bowl.
  • In a large bowl, cream together sugar and coconut oil using an electric mixer until creamy. Gradually add eggs one at a time, ensuring each is well incorporated. Mix in vanilla extract. Alternate adding the flour mixture and coconut milk, mixing well after each addition. Gently fold in chocolate chips. Fill muffin cups three-quarters full with the batter.
  • Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, approximately 17 to 20 minutes.
