Indulgent chocolate muffins with oats and coconut, perfect for brunch or dessert.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 4 eggs
  • 1 cup chocolate milk
  • 1 cup white sugar
  • 1 cup finely shredded coconut
  • 1 cup quick-cooking oats
  • 0.25 cup chocolate chips, or to taste
Instructions:
  • - Preheat your oven to 375 degrees F (190 degrees C) to ensure a perfect bake. - Grease a 12-cup muffin tin for easy removal of the delicious muffins.
  • Combine the flour, baking powder, and baking soda in a small bowl.
  • Using an electric mixer, beat eggs in a large bowl until light and frothy for about 3 minutes. Mix in chocolate milk, sugar, coconut, and oats until thoroughly combined for about 2 minutes. Slowly add flour mixture to the bowl and beat until batter is smooth without any lumps.
  • Divide the batter evenly into muffin cups, filling them two-thirds full. Finish off each muffin with a sprinkle of chocolate chips on top.
  • Bake until golden and a toothpick comes out clean, around 20 minutes. Let cool for 25 minutes before transferring to a serving plate.
