Chocolate tart

Decadent and irresistible chocolate tart.
Ingredients:
  • 375.00 ml plain flour
  • 24.00 gm icing sugar mixture
  • 125g butter, chilled, chopped
  • 20.00 gm chilled water
  • Cocoa powder, to serve
  • 2 egg yolks
  • 70.95 gm caster sugar
  • 83.33 gm thickened cream
  • 200g dark chocolate, melted, cooled
Instructions:
  • Combine flour, icing sugar, and butter in a food processor until mixture resembles fine breadcrumbs. Add egg yolk and chilled water, then process until dough forms. If needed, add more water. Transfer dough onto a lightly floured surface and knead until smooth. Shape into a 2cm-thick disc, wrap in plastic, and refrigerate for 30 minutes.
  • 1. Preheat your oven to 200°C/180°C fan-forced. 2. Grease a 24cm round fluted flan tin that is 3cm deep. 3. Roll out the pastry between two sheets of baking paper until it's 4mm thick. 4. Line the tin with the pastry, trim any excess, and then refrigerate for 30 minutes.
  • Place the tin on a baking tray and line the pastry with baking paper. Fill it with ceramic pie weights or uncooked rice. Bake for 12 to 14 minutes until set. Remove the paper and weights or rice, then bake for an additional 5 to 7 minutes until lightly golden. Allow it to cool, then reduce the oven temperature to 160°C/140°C fan-forced.
  • Prepare the filling: Use an electric mixer to blend egg yolks, eggs, and caster sugar until they become thick and creamy. Gently mix in cream and chocolate.
  • Carefully transfer the delicious filling into the pastry case. Bake for 25-30 minutes until perfectly set. Let it cool, then chill in the fridge. Sprinkle with cocoa and enjoy!
