Indulge in a decadent treat inspired by the famous Italian dessert from Pizzo - a luscious chocolate ice cream ball with a delightful cherry surprise inside, reminiscent of Roman cafes like Tre Scalini.
Ingredients:
  • 600g good-quality chocolate ice-cream
  • 4 glace cherries
  • 20.00 gm good-quality cocoa powder
  • Chopped toasted hazelnuts, to serve
Instructions:
  • Allow the ice cream to soften in the refrigerator for 20 minutes. Place a generous scoop of softened ice cream onto each of the four sheets of baking paper and gently press a glace cherry into the center of each.
  • Cover with another generous scoop of ice cream, secure tightly by twisting the paper around the top. Transfer onto a tray and freeze overnight. If they're not perfectly rounded, allow 3-4 hours for them to set, then reshape into balls using your hands before refreezing.
  • Take the tartufo out of the freezer 5 minutes before serving, and carefully remove the baking paper before placing them in a paper muffin case.
  • Generously coat each tartufo with rich bitter cocoa powder, arrange in a chilled glass or glass bowl, and finish with a sprinkle of toasted hazelnuts.
